Applications and Benefits:
1) Anti-inflammatory
Sophorolipids have been found to have anti-inflammatory properties by regulating the production of various inflammatory molecules such as nitric oxide, adhesion molecules, and cytokines. They have also been shown to reduce mortality rates in rat models of septic peritonitis. Additionally, sophorolipids can reduce the production of IgE and inhibit asthma in mouse models.

Sophorolipids have anti-tumor activity and can induce the differentiation of human promyelocytic leukemia cells into monocytes.
